Air fryer avocado with southwest ranch

These are a fun little treat, that feel a little less guilty. They’re crunchy on the outside and creamy on the inside, and adding that southwest ranch gives major flavor.

Ingredients:

  • Panko bread crumbs - 1 cup

  • Flour - 1/2 cup

  • Eggs - 2

  • Avocados - 2

Instructions:

-Slice avocados in 1 inch slices

-Lay avocados on a dish / cutting board. Squeeze lime over top and sprinkle salt. Place in freezer 30 minutes.

-Add your flour to a dish / Add your panko to another dish

-Add eggs to a bowl, add seasonings & mix well:

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp chili powder

  • 1/4 tsp black pepper

  • 1/4 tsp salt

- Take your avocados from freezer

- Dip in flour shaking off excess, then egg, then panko on both sides

- Add your breaded avocado back on cutting board and place in freezer 10 more minutes

- Remove from freezer, spray with cooking oil

- Airy fry @390 for about 7 minutes flipping halfway thru, you want them to be golden brown so adjust time based on air-fryer

- Alternatively you can bake this @400 about 10-15 minutes, cooking time may vary by oven

- Serve with southwest ranch

South West Ranch Ingredients:

  • Mayo: 3 tbsp

  • Sour cream: 3 tbsp

  • Heavy cream: 1/2 cup

  • 1 pack of hidden valley ranch dry seasoning

  • Franks red hot sauce: 2 tsp

  • Chili powder: 1 tsp

  • Cayenne powder: 1 tsp

  • Garlic powder: 1 tsp

  • Parsley: 1 tsp

Instructions:

- Add all your ingredients to a container with an air tight lid, mix well, taste and adjust seasoning to liking

- Cover and place in fridge until ready to use
