KB’s Breakfast Potatoes
I’m of English/Irish heritage. My boyfriend is Italian. They have endless recipes, restaurants, etc. Irish are known for “meat and potatoes.” Well I’ll tell ya, let someone try and see me on some POTATO recipes. It’s a weird culinary strong suit, but it’s def one of mine. I’ve made my Italian boyfriend a lover of all things potatoes. This recipe is one i’ve made in passing so many times. I decided to make it into a KKB Food recipe when I served it to my two uncles one morning down the shore for breakfast and the exact quote “These are the best breakfast potatoes i’ve ever had” came out of one of their mouths. * DING * new recipe alert.
These are so simple and versatile. Serve them as is, or try out one of the dress up options I suggest!
Serving size 2-4
Ingredients:
Baby golden potatoes: about 2 cups
Bell pepper - 1 cut into strips
Small yellow onion - 1 cut into thin, long strips
Olive oil - about 1-2 tbsp
Butter - 1 tbsp
Chicken stock - 1/2 cup
Garlic powder
Onion powder
Paprika
Salt
Pepper
Fresh dill
Red pepper flakes
Parsley
Instructions:
Bring a salted pot of water to a boil
Add about 2 cups of baby golden baby potatoes
Cook 10 minutes / Check softness with fork, add more cooking time if needed
Slice 1 bell pepper (I used red) into long strips
Slice 1 small yellow onion into slices
Remove cooked potatoes / let cool & cut in halves
In a pan turn to medium heat add EVOO, potatoes, peppers & onions
Sauté until slightly browned
Turn heat to low, add 1 tbsp of butter, 1/2 cup of chicken stock
Add seasonings:
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp paprika
- 1/2 tsp salt, 1/2 tsp pepper
-1 tbsp fresh dill
Cover and cook on low about 10-15 minutes
Uncover, mix. Garnish with salt, pepper, paprika, red pepper flakes, parsley and more fresh dill if you like
Serving options:
Top with jalapeños, cooked crumbled chorizo, shredded cheddar jack & sour cream
Top with a sunny side up egg
Make a breakfast burrito adding these potatoes, avocado, tomato, shredded cheddar, chicken sausage and a scrambled egg
