Spicy Avocado Soup

My sister had introduced me to an instagram page who made an avocado soup. I was intrigued. I like avocado, but I’m not on the obsessed bandwagon so I thought i’d try out making my own spicy avocado soup and see what it’s all about. I was NOT disappointed. It’s creamy and cool-ness you get from the avocado, pairs so well with the heat from the spice. Don’t let the idea of avocado soup steer you away, you may just become a new passenger on the avocado bandwagon.

Ingredients:

- Chicken thighs - I used 2

- Yellow onion - 1 small minced

- Minced garlic - 1 tbsp

- Minced jalapeño - 1 tbsp

- Minced pimento peppers - 1 1/2 tbsp

- Chicken broth - 32 oz

- Frozen corn - 1 tbsp

- Avocados - 2

- Lime - 1 small lime

*I always start with 1 tsp of seasoning and add more to taste:

- Garlic powder

- Onion powder

- Cumin

- Smoked paprika

- Salt - ½ tsp

- Pepper - ½ tsp

Topping ideas:

- Cheddar jack

- Sour cream

- Lime squeeze

- Cotija cheese / Queso fresco

- Hot sauce of your choice

- Jalapeños

Instructions:

- In your pot add olive oil and quickly sear chicken on both sides about 2 minutes & remove ; let cool and then cut into bite size pieces; your chicken will not be fully cooked at this time just seared on the outside, it will finish cooking in the soup

- Add tbsp of olive oil to pot and add your onion

- Sauté until softened about 2 mins

- Add minced garlic, jalapeño & pimento peppers & sauté 2 minutes

- Add your chicken broth reserving 1 cup for avocado mix , chopped chicken and 1 tbsp cumin

- Cover and cook on a low simmer about 10 minutes

- When chicken is cooked remove with a slotted spoon and chop into smaller pieces, shred or mince

- Add your chicken back in with frozen corn

- Turn to low and cover

In a blender add:

• avocados

• The juice squeezed from 1 small lime or about 1 tsp of lime juice

• 1 Cup of your chicken broth

• Blend together

- Add your avocado mix into soup & mix well

- Season with:

- garlic powder

- Onion powder

- Salt

- Pepper

- Cumin

- Smoked paprika

Taste & adjust flavor to your liking

Top with toppings of your choice!
