Southern style green beans

One of the first sides I made that I really loved was my southern style collard greens. They took quite a bit of time, but the flavors marinated so well together. Liquid smoke, salty bacon, a little bite from the vinegar smoothed out with sweetness from the brown sugar. But I don’t always have time for all the work homemade collards take, so I decided to take the same concept and make it with green beans. This dish pairs so well with slow cooked or smoked meats.

Ingredients:

Bacon - 4 slices

Butter

Onion - 1 small cut into thin slices

14.5 oz can of green beans

Chicken stock - 1/2 cup

Apple cider vinegar - 2 tsp

Liquid smoke - 1 tsp

Seasonings:

Salt / Pepper

Parsley

Red pepper flakes

Smoked paprika

Onion powder

Garlic powder

Brown sugar

Instructions:

  • Cook bacon, remove and chop cooled bacon

  • Pour out excess grease but don’t clean pan

  • Turn to medium low heat

  • Add your butter

  • Add your sliced onion & stir sautéing until softened

  • Add your green beans & chicken stock , stir

  • Add apple cider vinegar, liquid smoke and stir

  • Add seasonings ; start with

  • 1/2 tsp of salt pepper, red pepper flakes

  • 1 tsp of parsley, smoked paprika, onion powder, garlic powder, brown sugar

    • You can always adjust your flavor at the end but best to start with less and add more as you cook

  • Stir in all the seasonings and simmer

  • Right before serving stir in your cooked bacon
